- ➤ MeCo Coffee Collective opened a new store in downtown Frederick in the former home of Mountain Cowboy Brewing Company—joining its shops in Longmont and Lafayette. The coffee shop offers espresso, pastries and drinks and will host open mic comedy nights every Tuesday starting May 6—adding a fresh community space for local residents. Colorado Hometown Weekly
GOVERNMENT NEWS
- ➤ The City began renovating the Starkey Building in the Festival Plaza area in early 2025 to convert the historic home into a community hub; work has included foundation reinforcement, wall removal and interior framing installation while preserving the original front porch and window trim. A new concrete porch will be poured soon for better ADA access, and updated windows, doors and a fresh coat of paint will improve energy efficiency and expand event space. City of Lafayette
